2 1/2 lb potato 1 tbsp + 3/4 tsp salt 2 tbsp vinegar 3 stalks celery 1/2 cup mayo 1/4 cup relish 1/2 red onion 3 green onoin 1 tbsp dill 2 tsp mustard 1/2 tsp pepper 1/2 tsp paprika 2 eggs
Peel and dice the potatoes then place in stockpot and cover with water. Add salt and bring to a boil. Cook for 8 minutes until tender.
Drain the potatoes and cool, then add to a bowl with all other ingredients except eggs. Stir to combine.
If desired, add eggs, then stir to incorporate. Chill for at least 1 hour before serving.
