Packed with flavor, this easy Cajun chicken recipe is served over a bed of spicy orzo. The ideal meal for any family!
INGREDIENTS Chicken breast, olive oil, Cajun seasoning, red bell pepper, onion, garlic, paprika, orzo, milk, chicken broth, Parmesan, red pepper flakes, paprika, and lemon.
Season the chicken breasts and bake as directed. Let the cooked chicken sit for at least 5 minutes before slicing. Set aside for serving.
While the chicken bakes, heat olive oil in a stockpot. Cook peppers and onions, then add in the orzo, spices, milk, and broth.
Bring to a boil, then simmer for 10 minutes or until the orzo is done and no liquid remains. Then stir in the Parmesan and lemon before serving.
Serve the orzo with sliced chicken and fresh herbs. Add a slice of lemon on the side if desired. This is a great easy weeknight meal.
