Ingredients may vary depending upon your own preferences for fillings and toppings!
Put a layer of tortillas onto a sheet pan so they overlap the sides. Then top with 1/3 of the shredded cheese.
Layer with ground meat, vegetables, then cheese until all ingredients have been used, ending with shredded cheese.
Fold the tortillas over the sides and add an additional tortilla over the center to cover the filling. Then bake for 25-30 minutes until golden and crispy.
Slice and serve with sour cream, avocado, or salsa. Serve hot with a side of Mexican rice or a salad.
