Light and fluffy on the inside and crisp on the outside, these are a tasty side dish or snack!

INGREDIENTS Potatoes Butter Cheddar cheese Salt Black pepper Egg yolks

PREP TIME: 10 minutes REST TIME: 50 minutes

Wash and peel potatoes then cover with water and boil for 15-20 minutes.  Mash then add in butter, eggs, salt, pepper, and cheese and combine until incorporated.

Put the potato mixture into a piping bag with a star tip, then pipe bites onto a prepared baking sheet and bake for 40-50 minutes until golden.

Serve the Duchess potatoes hot with a sprinkle of salt and pepper on top and a side of ketchup for dipping if desired.
