INGREDIENTS Chicken breasts Olive oil Bell peppers Red onion Garlic powder Onion powder Salt Black pepper Paprika Cream cheese Mexican cheese blend
Slice and season bell peppers and onions then cook for 4 to 5 minutes in a hot skillet until the vegetables are softened.
Slice chicken breasts in half leaving one side intact, then combine the cheeses with the cooked vegetables. Stuff the chicken breasts with the cheese mixture.
Cook the chicken for 10 to 12 minutes per side, or until the chicken is cooked through and has reached 165F internally at the thickest part of the breasts.
Serve this chicken with your favorite Mexican inspired sides like refried beans, Mexican rice, or just with warm tortillas and fajita toppings!
