This simple 30-minute meal is a great choice for any busy weeknight and 100% kid-friendly with tons of cheesy goodness!
A one-pot meal that everyone loves - this kielbasa and rice skillet is ready in no time and delicious!
INGREDIENTS: Olive oil Kielbasa Onion Garlic Lemon juice Mustard powder Salt Black pepper Rice Broccoli Chicken broth Cheddar Mozzarella
Heat oil in large skillet over medium heat, then cook sausage pieces for 2 to 3 minutes per side.
Remove the sausage, then add 3 tablespoons chicken stock, onions, and garlic and cook for 5 minutes.
Once the onions are translucent, add in the rice, salt, pepper, and mustard powder and stir.
Stir in the chicken broth, then bring the mixture to a boil. Reduce to medium and cover for 15 minutes.
Remove the lid and pour the broccoli over the rice, but do not stir. Cover and cook for 5 minutes.
Now, stir in the broccoli and sausage with 1/2 cup cheese until mixed well.
Top with 1 cup of cheese, then place lid on top and cook for another 2 to 3 minutes until melted. Season if needed before serving.
This can be served by itself as a full meal, or alongside a favorite salad, steamed vegetable, or with crusty bread and butter.
