INGREDIENTS Egg Butter Heavy cream Chicken breast Pancetta Shredded cheese Pasta Salt Black pepper Garlic powder Onion powder Paprika Oregano
Season the chicken on both sides, then whisk egg and water in a bowl, combine flour with spices in a second bowl, and panko and spices in a third bowl.
Dredge the seasoned chicken breasts into flour first, then dip into egg, then finally into the seasoned breadcrumbs. While doing this, heat oil in the skillet over medium heat.
Cook for 3 to 4 minutes per side until golden brown and the chicken has an internal temperature of 165F. Remove from the pan and set aside on paper towels to drain.
In he same skillet, add butter and pancetta. Cook for 3 to 4 minutes until crispy, then remove from the pan and whisk in additional butter and flour.
To the flour whisk in reserved pasta water, heavy cream, and cheese to create sauce. Toss in the pasta and pancetta to coat well in the sauce.
Serve the pasta topped with sliced cooked chicken and parsley on top. Can also be served with grilled chicken, rotisserie chicken, or leftover chicken.
