Homemade Marshmallow Easter Peeps

INGREDIENTS:  2 tsp unflavored gelatin 1/3 cup water 1 cup sugar 1/2 cup water 1 tsp vanilla extract

Add water to large bowl and sprinkle gelatin over the top then set aside for 5 minutes.

In a heavy bottomed pan, cook sugar over medium heat until reaches 230F and soft ball stage. 

Slowly add the hot sugar to the gelatin mixture and beat until stiff peaks form.

Pipe onto a prepared baking sheet covered with sanding sugar then let set for 2 hours before serving.
