Lady fingers Coffee Rum Sugar Heavy cream Mascarpone Cocoa powder

STEP 1

Using a double broiler, combine the egg yolks and sugar until creamy and sugar dissolved.

STEP 2

Whip egg whites until foamy.

STEP 3

Whip heavy cream and remaining sugar until stiff peaks form.

STEP 4

Combine egg mixture, mascarpone, and whipped cream until smooth.

STEP 5

Dip lady fingers in the coffee and rum mixture.

STEP 6

In a dish, layer the lady fingers, mascarpone mixture and then repeat for 3 complete layers. Wrap and refrigerate.

STEP 7

Dust with cocoa powder before serving with fresh fruit and mint.
