This simple and easy recipe is a great way to add more veggies to your weeknight menu!
INGREDIENTS: Eggplant Olive oil Garlic cloves Tomato sauce Dried basil Salt Black pepper Ham Mozzarella cheese Cottage cheese
Clean and slice the eggplant into 1/2" pieces lengthwise. Place these onto a lined baking sheet and salt, then bake for 10 minutes until softened.
In a medium skillet, cook the garlic for one minute, then add in the tomato sauce, basil, salt, and black pepper then simmer for 10 minutes.
Add a slice of cheese and a slice of ham to each eggplant slice, then roll them and place into the bottom of a baking dish with sauce on the bottom of the dish.
Lay the eggplant rollups into the baking dish seam side down, then cover with remaining sauce, cottage cheese, and additional slices of cheese before baking.
Bake until golden brown and the cheese has melted then serve with additional sauce on top if desired. Great with a side of pasta and garlic toast!
