A classic barbecue side-dish, potato salad is full of flavor and texture with a delicious herbed sauce.
INGREDIENTS Potatoes, mayonnaise, sour cream, Dijon mustard, lemon juice, parsley, green and red onions, sugar, salt, pepper, hard boiled eggs, bacon
Cut potatoes into 1" pieces, then boil until fork tender. Drain and set them aside.
In a large bowl, mix together the mayonnaise, sour cream, spices, and herbs until combined well.
To the cooked potatoes, add the chopped egg, bacon, and red onion.
Then pour the herb dressing over the potatoes and stir until everything is coated nicely.
Serve chilled with additional chives, parsley, and chopped hard-boiled eggs on top. Best served within 3 days of preparation.
