No boxed mix needed for these delicious strawberry cupcakes and rich homemade buttercream!
INGREDIENTS NEEDED: Sugar, strawberries, flour, baking powder & soda, salt, butter, lemon, vanilla extract, strawberry extract , eggs, milk, powdered sugar.
Make the strawberry puree and let it cool. Then, cream together the sugar and butter until smooth. In a new bowl, whisk together the dry ingredients.
To the butter mixture, add the strawberry puree and extract, lemon zest and mix, then combine with dry ingredients.
Scoop into the lined cupcake pan and bake until a toothpick inserted in the center comes clean. This should take around 18 minutes.
Make the buttercream and then frost the cupcakes once they have cooled completely. Store in an airtight container until ready to enjoy!
