A simple homemade lemonade is paired with sweetened berries for a delicious frozen summer treat!
INGREDIENTS NEEDED: – 2 cups diced strawberries (400g) – 3/4 cup lemon juice (180ml) – 1 cup water (250ml) – 1 1/2 cups plus 1 teaspoon of granulated sugar (305g)
In a blender, combine the strawberries with 1 teaspoon sugar. Pulse until smooth. Then, divide this mixture into the ice pop mold making 8 to 12 ice pops.
Now, make your lemonade. Combine the sugar, water, and lemon juice and cook until the sugar is dissolved. Strain off any seeds or pith.
Now, divide the lemonade between the ice pop molds, pouring on top of the strawberry mixture. This will blend together some.
If desired, add a few whole berries into the molds before you top with the popsicle sticks and lids. Best frozen for 6 to 8 hours before serving.
Leave in the mold until ready to serve. If they are difficult to remove, run warm water over the outside of the mold for 30 seconds then try again.
