Enjoy the richness of garlic and butter in every bite of this layered and then fried potato dish!
INGREDIENTS NEEDED: – 4 1/2 pounds of potatoes – 1 head/bulb of garlic, – 2 tablespoons olive oil ) – 1/2 teaspoon salt – 1 1/8 cup butter – Vegetable oil for frying
Roast an entire head of garlic that has been drizzled with olive oil and wrapped in foil.
Once roasted, peel and mash then set aside.
Peel and slice the potatoes into thin rounds using a mandolin slicer.
Then mix together the potato slices, melted butter, salt, and mashed garlic until coated.
Layer the potatoes evenly in a parchment lined baking dish.
Then, you will bake the potatoes as directed.
One out of the oven, place a second pan on top, and then two cans.
Refrigerate as directed until the potato is compressed, then remove and slice into sticks.
Heat oil in a deep skillet, and then fry the potato "sticks".
Fry for 2 to 3 minutes, rotating on all sides, until they are golden brown.
These are a perfect appetizer, but make a great elegant side dish for a roast or steak. Serve with dipping sauce or alone with a sprinkle of salt.
