A simple combination of herbs, spices, and grated cheese is the base for roasting these potatoes for a perfect side dish!
INGREDIENTS Baby potatoes Olive oil Parmesan cheese Garlic powder Paprika Dried oregano Salt Black pepper
PREP TIME: 15 minutes COOK TIME: 30 minutes
Wash and slice your potatoes in halves then set aside. Preheat the oven to 400°F and brush a baking dish with olive oil and set aside.
Now, mix together the grated Parmesan, garlic powder, paprika, dried oregano, salt, and black pepper until combined well.
Pour this cheese and herb mixture into your prepared pan making sure the entire bottom of the pan is coated well. Spoon the mixture rather than dumping to spread.
Press the potatoes, cut side down, into this cheese and herb mixture. Once all in the pan, bake for 30 to 35 minutes until the cheese is browned and the potatoes are fork tender.
Serve as a side dish with any meal, or as an appetizer with a bit of sour cream dip or even ranch dressing for dipping.
