A light and easy salad packed with flavor and protein is ideal for a light lunch or starter for any meal!
INGREDIENTS FOR SALAD: Chicken breast, olive oil, lemon juice, garlic, salt, shawarma seasoning, quinoa, vinaigrette, cucumber, mixed greens, tomato, corn, pistachios, olives, and raisins.
STEP 1: Pulse the marinade ingredients togther in a blender until creamy and light yellow.
STEP 2: Then, pour this over the chicken along with the shwarama seasoning. Refrigerate for 20 minutes.
STEP 3: In a bowl, whisk together the vinaigrette and set it aside.
STEP 4: While the chicken marinades, cook the quinoa in water for 15 minutes.
STEP 5: Grill the marinated chicken for 4 to 5 minutes per side until cooked through.
STEP 6: Wait 5 minutes before slicing the chicken and topping the salad with it.
Serve this salad with a drizzle of vinaigrette on top and crumbled feta. A nice flavorful and veggie loaded meal with tons of protein!
