STEW INGREDIENTS: Bacon, beef stew meat, salt, pepper, celery, carrots, onion, garlic, potato, turnip, beer, broth, Worcestershire sauce, bay leaf, thyme, cornstarch, mushrooms, and parsley
In a Dutch oven, cook the bacon until crisp then remove and set aside.
Season and cook the beef in the same pot until just browned then remove.
Now add the carrots, onions, and celery to the skillet and cook until tender.
Then add tomato paste and garlic and stir well.
Add the beer and Worcestershire sauce to the pot and bring to a boil.
Then add back the beef, broth, and seasonings and bring to a simmer. Cover and cook 2 hours.
Add the potatoes and turnips, then continue cooking for 30 minutes.
Add the mushrooms and cook until tender. Add a cornstarch slurry if too thin.
Mix the biscuit dough and for into 6 to 8 small dumplings and put on top of the stew.
Bake for another 20 to 30 minutes before serving.
Serve this stew with a sprinkle of fresh chopped parsley! It's best on a warm winter day, and leftovers are even better!
