JAPANESE MILK BREAD

INGREDIENTS

All-purpose flour Milk Yeast Sugar Bread flour Salt

Heavy cream Unsalted butter Egg Water

In a small saucepan, whisk together milk and flour cooking for 2 minutes to create a flour paste. Set aside to cool.

In a large bowl whisk together the bread flour and salt then make a well in the center of the flour mixture. 

Add the sugar and yeast to the well in the center, then add the cream and whisk JUST the sugar, yeast, and cream together.

Whisk together the milk flour paste with one egg then combine it and the melted, cooled, butter with the flour and yeast to form a dough.

Combine to make a dough, then knead until a smooth elastic dough forms. Cover loosely and rest in a warm place for 1 hour until double in size.
