The perfect combination of creamy cheese sauce, bright vegetables, chicken, and tortillas makes the ideal weeknight casserole dish!
PREP TIME: 10 minutes COOK TIME: 1 hour
INGREDIENTS Butter Garlic Onion Bell pepper Bouillon Pepper Garlic powder Chili powder Chicken broth Chicken & mushroom soup Chicken Cheddar cheese Tortillas
STEP 1: Cook onions, bell pepper, and garlic over medium heat in skillet with butter.
STEP 2: Once softened, add the bouillon, garlic powder, black pepper, and chili powder then stir.
STEP 3: To the skillet of vegetables, add the chicken broth and bring to a simmer.
STEP 4: Then add the diced tomatoes, cream of chicken, and cream of mushroom soups.
STEP 5: Stir in the Monterey Jack cheese cubes and chicken then stir to combine.
STEP 6: Cook until the cheese has melted then remove from the heat.
STEP 7: Create layers in a baking dish with tortillas, then 1/2 the chicken mixture.
STEP 8: Add the second layer of tortillas and chicken, then top with shredded cheese.
STEP 9: Cover the casserole with foil and bake for 30-minutes.
STEP 10: Then remove the foil and cook an additional 10-minutes.
Let the casserole stand for 5 to 10 minutes before slicing to serve. Serve with sour cream, salsa, avocado, and cilantro!
