This light and refreshing salad dish is loaded with nutritious vegetables and bright flavors plus packed with protein!
INGREDIENTS Chicken breasts, garlic powder, sage, salt, pepper, chickpeas, tomatoes, bell pepper, corn, cucumber, red onion, vinegar, lemon juice, Italian herbs.
Season and grill the chicken breasts for 5 minutes per side until 165°F internally then rest for 5 minutes. Cut into cubes and set aside.
Combine the vegetables in a bowl with the chickpeas. Then whisk together the dressing in a separate bowl before combining the two.
Add the chicken and toss the salad together. If wanted, add in the corn and cucumber at this time and toss before serving.
