OLIVE OIL LEMON CAKE

Olive oil makes this cake super moist and rich.  A bit of lemon juice brings bright flavor and is sure to be a favorite!

INGREDIENTS NEEDED:  Olive oil, eggs, sugar, milk, vanilla extract, lemon juice, lemon zest, flour, baking powder, baking soda, and salt

Begin by whisking the eggs and sugar together with the olive oil.  Once combined add in the vanilla, lemon juice, and lemon zest and whisk to combine.

Then, sift the dry ingredients together into a separate bowl.  Now, combine the two into a smooth batter with no lumps. 

Pour into the prepared baking dish then bake until a toothpick inserted in the center comes out clean.  Dust with powdered sugar before serving.

This cake is super moist with a refreshing and tart flavor.  Ideal for an easy springtime dessert.  Serve alone or with whipped cream and berries.
