COCONUT ICEBOX CAKE

INGREDIENTS: Milk Vanilla pudding mix Butter Sugar Vanilla extract Coconut flakes Digestive biscuits

In a bowl, combine 1 cup milk with dry pudding mix and set aside. In a saucepan, heat the remaining 3 cups milk until hot but not boiling. 

Stir the pudding into the hot milk and cook on low until thickened. Then set aside to cool.

Once the pudding is cooled, combine with softened butter, sugar, vanilla extract, and coconut. 

Layer in a baking dish with cookies first then pudding mixture for at least 3 layers.  Chill until ready to serve.
