1. Line a baking sheet with parchment paper and set aside. 2. Place the cookies into your food processor or blender and pulse until small crumbs. 3. Add in the cream cheese and pulse until the mixture is smooth.
5. Cover the balls and freeze for until firm (2 hours to overnight). 6. In a microwave safe bowl, melt the white chocolate in 30-second increments until just melted. If too thick, add in coconut oil and stir until combined and thin enough for dipping. 7. Using a fork, dip the frozen ball into the melted chocolate then tap gently to remove any excess.
8. Place the balls back onto the baking sheet and top immediately with sprinkles or crushed candy if desired. 9. Store in an air tight container until ready to serve.
