PAN-SEARED HALIBUT  WITH LEMON CAPER SAUCE

INGREDIENTS

Halibut filets Smoked salt Black pepper Paprika Olive oil

Butter Garlic Lemon juice Lemon zest Capers Parsley

Slice the halibut filet into 4 equal portions around 3" to 4" wide.

Season both sides generously with salt, black pepper, and paprika.

In a large skillet, heat olive oil over medium heat.  Cook the fish skin side down for 2 to 3 minutes until crisp. 

Flip and cook an additional 2 to 3 minutes until cooked through and at least 140F internally at the thickest point of the filet.

Set the fish aside, and in the same skillet, melt butter with garlic. Cook 1 minute then add lemon juice, lemon zest, capers, and parsley.  Cook for an additional 1 to 2 minutes.
