PEANUT BUTTER POTATO CANDY

INGREDIENTS 6 cups powdered sugar 1/2 cup butter 1/2 cup peanut butter 1/2 cup mashed potatoes 1 tablespoon vanilla extract

In a large bowl, mix together the mashed potatoes, butter, and powdered sugar to form dough then stir in vanilla. 

Refrigerate the dough for 1 hour, then split in half and roll each half into a rectangle.  Spread the top with peanut butter. 

Roll into a log then slice into 1/2" pieces to serve. Refrigerate leftovers for up to 1 week.
