Wash and pat dry an eggplant then trim the ends and cut into 1/2" rounds.
Lay on a baking sheet and sprinkle with salt then let stand 10 minutes.
In a bowl, mix together the tomato sauce, dried basil, and Parmesan cheese.
Add salt to taste and other spices as needed then stir well.
Spread sauce over the eggplant rounds.
Then top each round with a slice of pepperoni and sprinkle of cheese.
Bake the pizza bites for 10 to 15 minutes until softened and the cheese is melted. Serve hot with sauce for dipping!
