INGREDIENTS FOR CAKE Cake Flour Sugar Baking Soda & Baking Powder Salt Butter Milk Eggs Vanilla extract Vegetable oil

In a large bowl, combine the flour, sugar, baking soda, baking powder, and salt.  Add in the butter and beat until a crumbly mixture forms.

Add in the eggs one at a time, then mix in the vegetable oil.  Once combined, add in the vanilla extract.

Pour the batter into the prepared pans and bake at 350 degrees for 25 minutes. 

INGREDIENTS Blueberries Raspberries Sugar Cornstarch Water Lemon juice & zest

Combine the sugar and berries in a saucepan and heat over low until sugar dissolves. Add in the cornstarch slurry, zest, and juice and set aside to cool.

INGREDIENTS Heavy whipping cream Cream of tartar Butter Cream cheese Mascarpone Vanilla extract

Combine the whipping cream and cream of tarter until soft peaks form.  In a new bowl, combine the cream cheese, butter, mascarpone, and powdered sugar.  Fold together and cool.

Assemble the cake with frosting and berry compote in center of two layers.  Frost the outside as deisred, then top with additional berries.
