Fresh vegetables, sliced cheese, and tender chicken breasts combine for a unique and tasty hasselback chicken.
INGREDIENTS Tomato Red onion Zucchini Bell pepper Mozzarella Chicken breasts Salt & Pepper Olive oil
PREP TIME: 10 minutes REST TIME: 40 minutes
Slice vegetables in 1/4" thick slices, then repeat with mozzarella. Season the chicken on both sides, then cut slits into the top and stuff with cheese and vegetables.
Bake for 30 minutes, then sprinkle the top with additional cheese and continue baking until the chicken is at least 165 degrees internally.
Serve the keto-friendly chicken alone or with a side of potatoes or rice if your macros allow! This can also be made using chicken thighs if you prefer.
