This simple side dish has the perfect balance of flavors with protein, nutrients, and deliciousness in every bite!

INGREDIENTS Olive oil Mushrooms Spinach Garlic Onion powder Salt & Pepper Balsamic vinegar

PREP TIME: 5 minutes COOK TIME: 15 minutes

Heat oil over medium heat and add mushrooms.  Cook for 7-8 minutes, stirring regularly, until softened.  Add onion powder and garlic and stir then cook an additional 1 minute.

Begin adding spinach by the cupful to the skillet, adding more as it wilts.  Stir well and cook for a few minutes until all of the spinach is wilted and heated through.

Season with salt and pepper, then stir in the balsamic vinegar.  Taste and add Parmesan on top if desired before serving.
