SEMI-HOMEMADE SFOGLIATELLE

Use puff pastry for a fast and easy version of the delicate sfogliatelle you love!

INGREDIENTS NEEDED:  – 1 sheet puff pastry – 7 tablespoonsbutter – 4 tablespoons cream cheese – 2 tablespoons apricot jam – 1 large egg – 1 tablespoon milk

Unroll the puff pastry sheet and divide into 3 sections.  Roll each out into a rectangle, then brush butter on each, before stacking together. 

In a medium bowl, combine the cream cheese you have softened with the apricot jam until it is smooth. This will be your filling. 

Now, roll the dough into a log.  This creates the layers you expect from sfogliatelle.  Then, slice into 1" pieces. 

Now, push your thumb into the center and pull up the sides creating a small cone.  Then put a spoon of filling in each. 

Then press the edges together to seal and place on the prepared baking sheet.  Brush with eggwash before baking as directed. 

Bake and then dust with powdered sugar before serving.  These are best served warm straight from the oven with your favorite cup of tea!
