A keto-friendly recipe for shrimp cauliflower fried rice is a perfect fast and easy weeknight meal!
INGREDIENTS Riced cauliflower, shrimp, carrots, peas, onion, garlic, egg, ginger, soy sauce, sesame oil, rice vinegar, hoisin sauce, oyster sauce, salt, and butter.
Start by cooking the shrimp for 2 to 3 minutes until they are pink and curled in on themselves then remove from the pan.
Next whisk and season eggs, then scramble in the same pan until cooked through. Remove from the pan and set them aside.
To the same pan, add the garlic, ginger, onions, carrots, and peas and cook for 5 minutes. Stir regularly as they cook.
Once the vegetables are mostly softened, add in the riced cauliflower and stir to combine. Make sure the cauliflower has been drained and patted dry.
Add in the soy sauce, hoisin sauce, oyster sauce, and sesame oil then stir to combine. Cook the mixture for 5 minutes, then stir, and continue cooking another 5 to 7 minutes.
Stir in the eggs and shrimp before serving hot with additional soy sauce if desired over the top. This is ideal for serving as a meal by itself, but can also be a side dish.
