SPANAKOPITA WITH MUSHROOMS

INGREDIENTS

Olive oil Onion Mushrooms Garlic Ground chicken Spinach

Flour Heavy cream Feta crumbles Phyllo dough Butter Salt & Pepper

Over medium heat, cook the onions until translucent then add the mushrooms.

Cook the mushrooms and onions for 6 to 8 minutes until soft and golden brown in color.

Add the ground chicken to the skillet and cook, breaking up with a spoon, until cooked through.  Season with salt & pepper.

Once the chicken is cooked, add the spinach and cook for 2 minutes until it has wilted. Then add the flour, cream, and feta and cook,

Pour the mixture into a prepared baking dish and top with buttered phyllo dough.  Bake for 20 minutes until golden on top.  Let cool before slicing to serve.
