HERBED CHEESE STUFFED ZUCCHINI ROLL UPS

A perfect light and fresh appetizer with favorite elements of sushi!

PREP TIME: 10 minutes COOK TIME: 10 minutes

INGREDIENTS Zucchini Eggs Flour Cream cheese Dill Garlic powder Salt Tomato Arugula

STEP 1: Wash and remove the stem end of your zucchini, then slice into thin slices with a mandolin. 

STEP 2: Dredge the zucchini slices in flour then dip into egg coating each slice completely. 

STEP 3:  Heat oil in a deep skillet then fry the dipped slices for 1 to 2 minutes per side until crispy and golden brown. 

STEP 4: Combine cheese with herbs and garlic powder, then spread a thin layer over each cooked zucchini slice. 

STEP 5: Top with sliced tomato and arugula, then roll. 

Serve the stuffed zucchini rolls with soy sauce for a great flavor to dip.  These can also include any herbs you prefer or fresh spinach or kale to replace the arugula!
