PREP TIME 5 minutes COOK TIME 30 minutes
1 tablespoon paprika 1 teaspoon oregano Salt & Pepper
1 pound tomatoes 1 red onion 1 head garlic 1 pkg Boursin cheese
Drizzle olive oil in baking dish then add tomatoes, quartered red onion, whole head of garlic, and seasonings. Bake for 15 minutes at 425F or until tomatoes burst and onion is browned.
Add the Boursin cheese and bake for an additional 15 minutes. Once cooked, remove the head of garlic and press out just the cloves. Discard the garlic peel.
Place all of the ingredients into a blender and pulse until there are no chunks and at your preferred consistency.
