INGREDIENTS TOMATO EGGS PARSLEY SALT PEPPER FLOUR
Customize with your favorite spice blend, extra veggies, or shredded cheese!
Slice tomatoes into 1/2" rings then use a knife or small bowl to cut the center out of each ring. Set the ring aside, and chop the remaining tomato from the center into small pieces.
In a small bowl, whisk together the eggs, tomato pieces, fresh parsley, salt, flour, and black pepper. Add additional spices if desired at this point. Whisk until combined.
Place the tomato rings onto a hot skillet then fill the middle with the egg mixture. Cook for 1 to 2 minutes per side until the eggs are cooked through. Top with cheese if desired.
Serve the tomato egg rings alone for a low-carb tasty snack or alongside toast and bacon for a complete breakfast!
