In a small bowl whisk together the oyster sauce, soy sauce, mirin, vinegar, and brown sugar and set aside. 

Cook the udon according to package directions, drain, and set aside.

Cook the ground beef for 2-3 minutes then add in vegetables and cook for 5 minutes. Once cooked, add in the pasta and sauce, then stir to combine.
