A super easy recipe for your favorite White Castle chicken rings that you can make at home!
FOR CHICKEN BRINE: Chicken breasts, boiled potatoes, onion, garlic, green onion, salt, breadcrumbs, parmesan, egg, and cornflakes.
Chop the chicken into small pieces, then combine with the potatoes, onion, garlic, green onion, breadcrumbs, and parmesan.
Then put into a food processor and pulse until it is a smooth mixture. Put into a piping bag and pipe onto a prepared baking sheet then refrigerate 1 hour.
Once set, dip the rings into egg, then breadcrumbs, then the cornflake mixture. Make sure they are cy are coated well on all sides.
Now, heat oil in a deep skillet and fry for 3 to 4 minutes per side until cooked through, golden brown, and crispy.
Serve these chicken rings hot with a cheese sauce, ranch dressing, or your favorite barbecue sauce for dipping! Make ahead for easy lunches!
