Fast and Fluffy American Pancakes Recipe

Ingredients

  • 2 cups all purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2 large eggs
  • 1/3 cup sugar
  • 1/3 cup melted butter (or vegetable oil)
  • 1/2 tsp vanilla extract
  • 1 1/4 cups milk

Optional toppings

  • Blueberries
  • Bananas, sliced
  • Butter
  • Syrup

Instructions

  1. Sift the flour and baking soda together in a large bowl;
  2. In a separate bowl, beat together the eggs, sugar, oil, and vanilla until the sugar has dissolved; Eggs in bowl
  3. Add the wet mixture into the dry mixture and stir to combine;
  4. Add the milk to the batter and stir to combine; Pouring eggs into dry mix
  5. Heat a large skillet or griddle and coat with butter or oil;
  6. Pour 1/4 cup of the batter onto the pan for each pancake;
  7. Cook for 2-3 minutes until the top begins to bubble, then flip and cook until golden brown; Pancakes in skillet
  8. Serve with butter, syrup, and fruit. Stack of pancakes with berries

Notes

Mix in your favorite pancake add-in's just before cooking for a different flavor.
