Classic Jamaican Curry Chicken Recipe

Ingredients

  • 1/4 cup vegetable oil
  • 2 boneless skinless chicken breasts, cut into 1" cubes
  • 1 yellow onion, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper chopped
  • 3 garlic cloves, minced
  • 1 large tomato, chopped
  • 2 tbsp Jamaican curry powder
  • 1/2 tsp paprika
  • Pinch of red pepper flakes
  • Zest of 1 lime
  • Juice of 1 lime
  • 1 cup chicken broth
  • 1/4 tsp black pepper
  • 1/4-1/2 tsp salt (to taste

Optional to taste

  • 2 slices habanero papper

Instructions

  1. Heat oil in a large skillet over medium high heat;
  2. Add chicken pieces into the oil and cook for 1-2 minutes on each side until slightly browned, they do not need to be cooked through; Chicken breast in cast iron skillet
  3. Remove the chicken from the skillet and set aside;
  4. Add the onion and garlic to the skillet and cook over medium heat for 2-3 minutes stirring occasionally;
  5. To the skillet, add the tomato, bell peppers, curry powder, lime zest, lime juice, paprika, red pepper flakes, and habanero if desired and cook for 5-6 minute stirring occasionally; Peppers and spices in cast iron skillet
  6. Place the chicken back into the skillet and cover with chicken broth;
  7. Stir to combine, reduce the heat, then cover and simmer for another 20 minutes stirring occasionally; Adding chicken broth to skillet

Replace the chicken breast with chicken thighs if preferred.
