The Best Ever Cheeseburger Soup Recipe

This simple cheeseburger soup recipe is a perfect combination of seasoned ground beef, creamy cheese, and a delicious broth that results in the perfect bowl of comforting soup.

Ingredients

  • 1 lb ground beef
  • 1 yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 2 stalks celery, chopped
  • 1 tsp dried basil
  • 1 tsp dried parsley
  • 1/2 tsp dried oregano
  • 4 tbsp butter, divided
  • 4 cups chicken or beef broth
  • 4 cups potatoes, cubed
  • 1/4 cup all purpose flour
  • 1 lb cheddar cheese, cubed
  • 1 1/2 cups heavy cream
  • 1/4 cup sour cream

Garnishes

  • Shredded cheddar
  • Diced green onions
  • Sesame seeds
  • Pickles
  • Jalapenos

Instructions

  1. Melt 1 tablespoon butter in a large dutch oven over medium heat;
  2. Add the ground beef to the pot and cook until browned and no longer pink; Ground beef cooking in dutch oven
  3. Stir in the onion and garlic and cook for an additional 1-2 minutes;
  4. Add the bell pepper and celery to the beef and stir then cook for another 2-3 minutes; Adding vegetables to ground beef
  5. Add the basil, parsley, oregano, potatoes, and broth then stir;
  6. Bring the mixture to a boil, then simmer for 10-12 minutes until the potatoes are fork tender; Adding potatoes to cheeseburger soup
  7. Mix together the remaining butter and flour in a small dish then add to the soup;
  8. Slowly pour the cream into the soup stirring constantly and bring to a boil;
  9. Reduce the mixture to low heat and simmer for 5 minutes and then add in the cheese;
