Crispy Mahi Mahi Tacos with Red Cabbage Slaw

Crispy tender mahi mahi tacos with a homemade red cabbage slaw are the perfect weeknight meal. Ready in under an hour and packed with flavor and texture, these are always a hit!

Ingredients

Red Cabbage Slaw

  • 6 cups shredded red cabbage
  • 1 red onion, sliced
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp vegetable oil
  • Juice of 1 lime
  • Zest of 1 lime
  • 1/2 tsp salt

Creamy Lime Sauce

  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • 2 cloves garlic, minced
  • 2 tbsp lime juice
  • Zest of 1 lime
  • 1/8 tsp salt
  • Pinch black pepper

Mahi Mahi

  • 1 1/2 lb mahi mahi fillets
  • 1 cup all-purpose flour
  • 1 tsp salt
  • 1 tsp smoked paprika
  • 1/2 tsp black pepper
  • 1/2 tsp cumin
  • 1 cup beer or sparkling water

For Serving

  • 8 corn tortillas
  • Lime wedges
  • Chopped fresh cilantro
  • Diced green onions
  • Hot sauce

Instructions

Red Cabbage Coleslaw

  1. Toss all slaw ingredients together in a large bowl, cover, and refrigerate until ready to serve; Cabbage slaw ingredients in large bowl

Lime Cream Sauce

  1. In a small bowl, whisk together the mayonnaise, sour cream, lime juice, zest, garlic, salt, and black pepper. Cover and refrigerate until ready to serve; Ingredients for slaw derssing in bowl

Mahi Mahi Fillets

  1. In a large bowl, sift together the flour, salt, pepper, paprika, and cumin then whisk in the beer or sparkling water until smooth; Tempura batter dry ingredients in bowl
  2. Heat oil in a cast iron skillet until sizzling;
  3. Dip each fish fillet into the batter and coat, then gently place in the hot oil;
  4. Cook for 2 minutes per side until golden brown and cooked through then remove to drain on paper towels; Mahi Mahi filets in cast iron skillet
  5. Continue until all fillets are fried;

To Serve

  1. Place a fried fillet on each tortilla, top with cabbage slaw, and lime cream sauce. Add diced onions, fresh cilantro, and hot sauce if desired. White platter filled with mahi mahi tacos

Notes

If using beer, a dark ale adds the best flavor.
