Homestyle Slow Cooker Beef Stew Recipe

You'll love this simple slow cooker beef stew recipe filled with rich flavor and tender bits of beef in every bite.

Ingredients

  • 2 lb chuck roast, cut into 1" cubes
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup all-purpose flour
  • 3 tbsp vegetable oil
  • 1 yellow onion, chopped
  • 4 cloves garlic, minced
  • 2 tbsp Worcestershire sauce
  • 4 cups beef broth
  • 1/2 lb carrots, cut into 1/4" pieces
  • 3 stalks celery, diced
  • 1 lb red potatoes, peeled and cut into 1/2" pieces
  • 2 bay leaves
  • 3 sprigs fresh rosemary

Cornstarch Slurry if Needed

  • 3 tbsp cornstarch
  • 4 tbsp water

Instructions

  1. Trim and cut chuck roast into 1" cubes;
  2. In a large bowl, toss the beef with the flour, salt, and black pepper until coated;
  3. Heat the vegetable oil over medium-high heat in a large nonstick skillet;
  4. Place the beef into the hot oil in a single layer and cook for 1-2 minutes per side, this may require multiple batches, as the beef is cooked, place it into the slow cooker; Beef chunks cooking in skillet
  5. Once all beef is browned, add the onions and garlic to the pan and cook for 1-2 minutes then pour in 1 cup of beef broth and deglaze the pan;
  6. Pour this mixture over the beef in the slow cooker;
  7. Add in the carrots, celery, potatoes, Worcestershire sauce, bay leaves, rosemary, and remaining beef broth into the slow cooker, stir to combine, then cover; Stew ingredients in crock pot
  8. Cook for 7-8 hours on low or 3-4 hours on high;
  9. Add salt and black pepper to taste and using cornstarch and water, add a slurry to thicken if needed, if using the slurry, let cook for an additional 20-30 minutes before serving; Cooked stew in slow cooker
  10. Garnish with fresh chopped celery. White bowl of beef stew

Notes

Add green peas in the last 30 minutes of cooking for an additional texture and flavor that is traditional to beef stew.
