Ingredients
2 lb chuck roast, cut into 1" cubes
1 tsp salt
1/2 tsp black pepper
1/4 cup all-purpose flour
3 tbsp vegetable oil
1 yellow onion, chopped
4 cloves garlic, minced
2 tbsp Worcestershire sauce
4 cups beef broth
1/2 lb carrots, cut into 1/4" pieces
3 stalks celery, diced
1 lb red potatoes, peeled and cut into 1/2" pieces
2 bay leaves
3 sprigs fresh rosemary
Cornstarch Slurry if Needed
3 tbsp cornstarch
4 tbsp water
Instructions
Trim and cut chuck roast into 1" cubes;
In a large bowl, toss the beef with the flour, salt, and black pepper until coated;
Heat the vegetable oil over medium-high heat in a large nonstick skillet;
Place the beef into the hot oil in a single layer and cook for 1-2 minutes per side, this may require multiple batches, as the beef is cooked, place it into the slow cooker;
Once all beef is browned, add the onions and garlic to the pan and cook for 1-2 minutes then pour in 1 cup of beef broth and deglaze the pan;
Pour this mixture over the beef in the slow cooker;
Add in the carrots, celery, potatoes, Worcestershire sauce, bay leaves, rosemary, and remaining beef broth into the slow cooker, stir to combine, then cover;
Cook for 7-8 hours on low or 3-4 hours on high;
Add salt and black pepper to taste and using cornstarch and water, add a slurry to thicken if needed, if using the slurry, let cook for an additional 20-30 minutes before serving;
Garnish with fresh chopped celery.
Notes
Add green peas in the last 30 minutes of cooking for an additional texture and flavor that is traditional to beef stew.
