Brown Sugar Walnut Banana Bread Recipe

Ingredients

Bread Batter Ingredients

  • 2 1/2 cups all purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup chopped walnuts
  • 4 ripe bananas, mashed
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 2 tsp vanilla extract

Brown Sugar Walnut Topping Ingredients

  • 1/2 cup packed brown sugar
  • 1/2 cup chopped walnuts
  • 2 tbsp unsalted butter, melted

Instructions

  1. Preheat your oven to 325° degrees and spray the loaf pan with non-stick cooking spray or baking spray.  You can also coat it with butter and flour.
  2. In a large bowl, whisk together the flour, sugar, baking soda, and salt.
  3. Using a medium bowl, stir together the eggs, mashed bananas, melted butter, and vanilla extract.
  4. Pour the wet mixture into the large bowl with the dry ingredients and add in the walnuts.
  5. Stir the mixture using a spatula and fold until just combined. Do not over mix or you will have tough muffins. Mashed bananas with flour
  6. Pour the batter into the prepared loaf pan.
  7. In a small bowl, melt the butter for the topping, then mix in the brown sugar and walnuts.
  8. Spread this over the top of the bread mixture in the pan.Banana bread in loaf pan
  9. Place in the oven and bake for 45 minutes to 1 hour or until a toothpick inserted in the center comes out clean.
  10. Allow the bread to rest for 10 minutes in the pan before turning out onto a wire rack to continue cooling.  I recommend letting it cool completely before you cut so it doesn't crumble.Banana bread on cutting board

Notes

Mix in 1/2 cup walnuts and 1/2 cup chocolate chips for a different flavor.
