Rich Vegetarian Mushroom Stroganoff Recipe

This rich vegetarian mushroom stroganoff recipe is a perfect weeknight meal. Ready in 30-minutes or less, it is a fast and hearty meal packed with protein.

Ingredients

  • 2 tbsp unsalted butter
  • 2 tbsp olive oil
  • 1 white onion, chopped
  • 1 tsp dried thyme
  • 1  tsp salt
  • 1/2 tsp black pepper
  • 12 oz button mushrooms, sliced or chopped
  • 2 cloves garlic, minced
  • 4 tbsp all-purpose flour
  • 1/2 cup dry white wine (or vegetable broth)
  • 1 tsp paprika
  • 2/3 cup heavy cream
  • 1 cup milk
  • 1/4 cup sour cream
  • 16 oz egg noodles, cooked according to package directions

Instructions

  1. Prepare egg noodles according to package directions.  Drain and set them aside.
  2. In a large skillet, over medium-high heat, heat the oil and melt the butter.
  3. Add diced onions to the skillet and cook for 3-4 minutes until softened.
  4. To the skillet, add the diced mushrooms. 
  5. Stir and season with salt, pepper, and thyme.
  6. Cook for 6-8 minutes to soften mushrooms and until they begin to brown.
  7. To the mushroom mixture, add minced garlic.
  8. Stir and cook an additional 1-2 minutes
  9. Mix in the flour until the mushrooms are coated.
  10. Add in the white wine and scrape the bottom of the pan well to de glaze any food off the bottom of the pan. Continue cooking for 3-4 minutes.
  11. Add paprika, cream, and milk then stir to combine.
  12. Cook for 3-4 minutes until thickened.
  13. Remove the pan from heat, and stir in sour cream.
  14. Stir in cooked egg noodles.
  15. Serve with fresh chopped parsley. Mushroom stroganoff in a white bowl

Notes

Button mushrooms or baby bella are most common for this recipe, but you can try different varieties to find a combination your family prefers.
