Light and Easy Mediterranean Couscous Salad Recipe

Whip up this light Mediterranean couscous salad recipe to add a bright flavor to any meal! A great salad for a meal in itself or a simple side.

Ingredients

  • 1 cup couscous
  • 3 tbsp olive oil
  • 2/3 cup water
  • Pinch of salt
  • 1 cup cherry tomatoes, quartered
  • 1 cucumber, chopped
  • 1/2 red onion, chopped
  • 1/4 cup olives
  • 1/2 cup feta cheese
  • 2 tbsp fresh basil, chopped

Ingredients for Dressing

  • 1/4 cup olive oil
  • 3 tbsp lemon juice
  • 1/2 tsp garlic powder
  • 1 tsp dried oregano
  • 2 thyme sprigs, chopped
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. In a stockpot, heat olive oil over medium heat, then add the couscous and cook, stirring, for 1-2 minutes until the couscous begins to smell nutty.
  2. Add the water, and a pinch of salt, reduce heat to below, and cover. 
  3. Cook for 10 minutes, then remove from the heat, fluff with a fork, and set aside to cool.
  4. Clean and prepare the tomatoes, cucumber, and onion into bite sized pieces.
  5. In a small bowl, whisk together olive oil, lemon juice, oregano, garlic, thyme, salt, and black pepper. 
  6. In a large bowl, combine the couscous, vegetables, and dressing.  Mix well then fold in feta, basil, and olives before serving.

Notes

Best served chilled.
