Ingredients

  • 16oz yellow cake mix (1 box mix only)
  • 4 oz. instant vanilla pudding (small box)
  • 3/4 cup 7-UP or lemon lime soda
  • 4 eggs
  • 3/4 cup vegetable oil
  • Juice of 1 lemon
  • Zest of 1 lemon

Lemon Glaze

  • 2 cups powdered sugar
  • 2 tbsp lemon juice
  • 3 tbsp milk

How to Make a Cake Mix 7-Up Cake

  1. Preheat the oven to 325°F and spray a bundt pan with non-stick cooking spray.
  2. In a large bowl, combine the cake mix, pudding mix, eggs, oil, lemon juice, lemon zest, and soda.
  3. Mix until thoroughly combined.
  4. Pour batter into prepared bundt pan.
  5. Bake for 45-55 minutes until a toothpick inserted comes out clean.
  6. Let cool for 5 minutes in pan before flipping out onto a plate to finish cooling.

How to Make a Lemon Glaze

  1. In a small bowl, mix together the powdered sugar and lemon juice.
  2. Slowly add the milk into the mixture whisking until you have the desired consistency.
  3. Pour or pipe onto the prepared cake and top with additional lemon zest if desired.
