Strawberry Stuffed French Toast Rolls

Make these sweet French toast roll-ups filled with strawberries for a delicious breakfast or brunch!

Ingredients

Ingredients for French Toast Sticks

  • ½ cup granulated sugar
  • 2 tbsp cinnamon
  • 2 tbsp mascarpone cheese
  • 8 slices of bread
  • 1 cup strawberries, sliced

Ingredients for Batter

  • 3 eggs
  • 1/4 cup milk
  • 2 tsp vanilla extract
  • 1 tbsp granulated sugar
  • 2 tsp cinnamon
  • 1 tsp nutmeg

Instructions

  1. In a small bowl, whisk together the eggs, milk, vanilla extract, granulated sugar, cinnamon, and nutmeg to create the dipping batter then set aside. 
  2. Cut the crusts off of the bread slices. 
  3. Using a rolling pin, flatten the slices of bread. 
  4. On each slice of bread, spread a teaspoon of mascarpone cheese. 
  5. Layer sliced strawberries onto the bread. 
  6. Roll each slice of bread to create a tube placing the seam side down. 
  7. Pinch together the ends to seal. 
  8. Heat a grilled or skillet and coat with butter. 
  9. Dip the rolls into the batter coating well, then place them onto the hot griddle.
  10. Cook for 2-3 minutes per side until golden. 
  11. Remove from heat, and serve with your favorite toppings. 

Notes

Replace the mascarpone cheese with cream cheese, Nutella, or chocolate spread for a different flavor.
