Sausage Stuffed French Toast Roll-Ups

Whip up a batch of sausage stuffed French toast roll ups for a great weekday breakfast that everyone at your table will devour in minutes!

Ingredients

Batter Ingredients

  • 3 large eggs
  • 1/4 cup milk
  • 1 tsp vanilla extract
  • 2 tsp ground cinnamon
  • 1 tsp nutmeg
  • 1 tsp allspice

Ingredients for French Toast Rolls

  • 1/2 cup granulated sugar
  • 2 tbsp ground cinnamon
  • 8 slices white bread
  • 8 sausage links, cooked

Instructions

  1. Cook or heat the sausage pieces until 160°F internally then set aside. 
  2. In a medium bowl, whisk together the eggs, milk, vanilla extract, cinnamon, nutmeg, and allspice until incorporated. Set aside. 
  3. In a small bowl mix together the sugar and cinnamon then set aside. 
  4. Cut the crust off the pieces of bread. 
  5. Flatten each slice of bread with a rolling pin. 
  6. Spread the room temperature butter onto one side of each piece of bread. 
  7. Sprinkle the cinnamon sugar onto the buttered side of the bread creating an even layer. 
  8. Place the sausage on the end of the bread and roll the bread covering the sausage and creating a stuffed piece of bread. 
  9. Pinch the ends of the bread together to seal and set aside seam side down. 
  10. Melt the butter in a large skillet or on the griddle over medium heat. 
  11. Dip the rolls into the batter, then place them onto the prepared griddle. 
  12. Cook for 2-3 minutes per side until golden brown and cooked through. 
  13. Serve with your favorite dipping syrup or toppings. 

Notes

Use pork, chicken, or turkey sausage depending upon your dietary preferences.
