Ingredients
1 (15-ounce) can canned peaches (425 g)
1 cup brown sugar (213 g)
2 tsp cinnamon (5.2 g)
½ tsp nutmeg (1.2 g)
½ tsp all spice (1 g)
1/2 cup unsalted butter, divided (113 g)
1/2 cup olive oil (125 ml)
1 (8 ct) can) flaky layers biscuits
Instructions
In a deep-sided cast-iron skillet, melt 1/4 cup butter over medium-high heat.
To the butter, add the juice from the canned peaches, brown sugar, cinnamon, nutmeg, and allspice. Stir to combine.
Bring this mixture to a boil, stirring regularly.
Add the peaches to the skillet and stir to combine.
Once boiling, reduce the heat to medium and continue cooking for 8 to 10 minutes.
Once thickened, remove from heat and set aside.
In a clean skillet, add the olive oil and remaining butter and heat over medium-high heat.
Pull the biscuits apart, splitting them in half.
Place the biscuits into the hot oil and butter mixture, making sure not to crowd the pan.
Fry for 2 to 3 minutes per side until cooked through and golden brown.
Remove the biscuits from the oil and drain on paper towels.
Dust with powdered sugar if desired.
Layer the biscuits into a serving bowl and pour the peaches and syrup over the top.
