The Best Oreo Brookies Bars Recipe

Combine two favorites to create this delicious Oreo brookies bar recipe! Decadent brownies on the bottom with a sweet cookie layer on top!

Ingredients

Brownie Layer

  • 3/4 cup unsalted butter, melted (185 g)
  • 2 1/4 cups granulated sugar (450 g)
  • 2 tsp vanilla extract
  • 3 large eggs
  • 3/4 cup unsweetened black cocoa powder (96 g)
  • 1/2 tsp salt
  • 1 1/4 cups all-purpose flour, scooped and leveled (150 g)
  • 3/4 cup milk chocolate chips (120 g)

Cookie Layer

  • 12 oz white chocolate chips (240 g)
  • 1/2 cup unsalted butter (125 g) 
  • 24 Oreo cookies, chopped
  • 2 large eggs
  • 1/3 cup granulated sugar (67 g)
  • 2 tsp vanilla extract
  • 1 1/4 cups all-purpose flour (150 g)
  • 1/2 tsp salt

Instructions

  1. Preheat the oven to 350°F.  Grease the 9x13-inch baking dish or spray well with non-stick cooking spray.  
  2. In a large bowl, sift the cocoa powder, flour, and salt then set aside. 
  3. Using a hand mixer or stand mixer, in a large bowl, add the melted butter, sugar, eggs, and vanilla extract and whisk together until completely combined. 
  4. Add the sifted cocoa powder mixture into the egg mixture and mix until combined. 
  5. Next, pour in the chocolate chips and stir until just combined. Mixing brownie batter into bowl
  6. Spread the brownie batter into the bottom of the prepared pan into an even layer. 
  7. Bake for 20 minutes. 
  8. While the brownies are baking, make the second layer. 
  9. In a medium microwave-safe bowl, melt 2/3 of the white chocolate chips and butter in 30-second increments, stirring between each, until the chips are mostly melted. 
  10. Whisk the melted chips until they are completely melted, then set aside. 
  11. In a large bowl, use a mixer to beat the eggs until they are foamy.  
  12. Add in the sugar and vanilla extract, and then mix until completely combined. 
  13. Pour in the melted but cooled white chocolate chips. 
  14. Then add the flour and salt and mix until combined. 
  15. Fold in the chopped Oreo pieces and remaining white chocolate chips.
  16. Using a large spoon, drop chunks of the cookie dough over the brownie layer until it is mostly covered. Cookie dough spread over top of brownie in pan
  17. Bake for an additional 35 to 30 minutes until the dough is just set and golden. 
  18. Allow the brookies to cool completely before slicing to serve. Stack of three brownies on wooden board on white counter

Notes

To easily remove from the pan, line the baking sheet with parchment paper rather than spraying with non-stick spray.  With the paper overlapping the edges, you can easily lift the entire pan out to slice.
